But don’t let that fancy name scare you off! But, if you want even more protein to your meal, pair it with a cobb salad.If you are new to Cook Smarts, you will soon find out that we love to cook en papillote. Salads – Serve with Greek horiatiki salad, bright and fresh marinated artichoke salad, or a creamy avocado Caprese salad.I usually serve this chicken with less starchy mashed cauliflower or golden roasted rutabaga. Lemon – You will need a fresh lemon for lemon zest and lemon juice.Olive Oil – Any other neutral cooking oil, such as avocado oil, would work.

You can also use the same marinade for pan fried bone-in chicken thighs, whole chicken (use baking instructions from my spatchcock chicken or crispy air fryer whole chicken), or chicken wings (or try my lemon pepper wings instead).
